Grown at 5,905 feet on the slopes of Alotepeque, this lot captures the elegance and complexity of Geisha, nurtured by volcanic soil, cool mountain air, and the careful hands of the Morales family. Only the ripest cherries are picked by hand each January, then slowly transformed in the family’s on-site mill. Small pulpers, solar drying tunnels, and African beds allow the coffee to develop with patience and attention at every stage.
For their Geisha, the Morales family experiments with natural and honey processes, as well as longer anaerobic fermentations up to 72 hours. Drying can stretch 30 to 40 days depending on the weather, preserving each layer of flavor. The result is a cup of rare clarity and depth.
